Hummus di ceci

Oggi faremo un salto nel Medio Oriente per presentarvi una delle ricette più conosciute: l’hummus. Molti paesi ne rivendicano la paternità, ma ancora ad oggi non se ne conosce esattamente l’origine. E' una delle preparazioni più antiche e diffusa nel tempo in tutti i paesi arabi, grazie alla semplicità dei suoi ingredienti. Una deliziosa crema, dal sapore molto particolare: delicato e aromatico, per la presenza dei ceci e della tahina, ma anche leggermente asprigno per l’aggiunta del succo di limone che conferisce il giusto equilibrio a questa ricetta. In questa versione abbiamo voluto rispolverare la tradizione antica, realizzando la tahina fatta in casa. Per l'occasione ci siamo armati di "suribachi" e "surikogi" con cui un tempo si realizzava la farina e che noi abbiamo usato per miscelare e pestare tutti gli ingredienti, per un fantastico e ancora più genuino hummus! Lasciatevi conquistare da questa pietanza molto versatile, utilizzata per accompagnare le felafel, o come crema da spalmare. Un pizzico di paprika affumicata e il vostro hummus andrà letteralmente a ruba durante vostri aperitivi! Ceci precotti 600 g Semi di sesamo 100 g Acqua calda 150 g Succo di limone 135 g Olio di sesamo 30 g Paprika 1 cucchiaino Aglio 1 spicchio Sale fino q.b. Pepe nero q.b. Prezzemolo 1 ciuffo Per preparare l’hummus iniziate sbucciando lo spicchio d'aglio (1), dividetelo a metà per togliere l'anima interna e procedete tritandolo molto finemente (2). Quindi prendete il ciuffo di prezzemolo, sciacquatelo, asciugatelo e tritate anch'esso finemente (3). Procedete preparando la tahina (potete anche utilizzare quella in commercio se preferite): versate i semi di sesamo in una padella antiaderente (4) e tostate i semi a fuoco dolce per 2-3 minuti (5). Poi trasferiteli nell’apposita suribachi (la tipica ciotola giapponese) (6) e utilizzate il surikogi per mescolare e pestare i semi di sesamo tostati. Se non avete questi strumenti, potete utilizzate un mixer. Iniziate a pestare e solo dopo qualche istante aggiungete l'olio di sesamo a filo (7), un pizzico di sale, l'acqua calda (9) e continuate a mescolare. Se preferite una tahina più densa potete aggiungere altro sesamo tostato, se più liquida aggiungete altro olio di semi o acqua calda. Poi unite i ceci precotti, scolati dal liquido di conservazione (10) e continuate a mescolare e pestare. Spremete il succo di mezzo limone (11) e unite l'aglio, del prezzemolo tritato, salate e pepate (12) nuovamente e mescolate ancora. Una volta pronto l'humms, potete aromatizzare ancora con prezzemolo fresco, paprika affumicata (13) e ancora un filo d'olio di semi (14), quindi il vostro hummus è pronto (15)! Servitelo come antipasto insieme a fragranti bruschette di pane o per una cena a tema mediorentale con pane azimo o arabo leggermente tostato in forno!
